Summertime Yellow Tomato Sauce

I love yellow tomatoes. Although they have roughly the same amount of acid as red tomatoes, they taste less acidic. This is a good recipe for a visually different looking sauce. It is a basic sauce, but full of rich tomato flavor. It's excellent on pizza and pasta.

Ingredient 
5 medium size yellow tomatoes 
1 small onion diced fine
4 cloves garlic 
1/4 teaspoon diced basil 
1/4 cup extra virgin olive oil 
salt and pepper to taste.

Start by scoring a cross on the bottom of the tomato. Place them in pot of boiling water. I do one at a time for better control. Allow them to boil  for about 1 minute, then carefully remove them and place them in an ice bath. When they are cool, the skins should peel right off. Cut the tomatoes in quarters ,and remove the seeds. Try to save as much of the juice and flesh as possible.
In a medium skillet, add the olive oil, and heat it over medium low heat. Add the onion and garlic. You want to them to turn translucent, but not brown.
In a medium size bowl, squish up the tomatoes with your hand. (Have fun, no judgement here). Add the squeezed tomatoes to the onion garlic mix. Simmer over a low heat for about 2 hours. Stir occasionally.
When the sauce has reduced by half, it is ready. Serve over you favorite pasta and enjoy!!
