Sometimes you want something quick and easy for dinner. This is a great recipe that takes less than an hour, with most of the time waiting on a dry brine to do it's thing. I did a double batch so we would have leftovers.
Ingredients:
4 bone-in, skin-on chicken thighs
Salt to taste
Pepper to taste
1/4 teaspoon baking powder
Start by removing the thighs from their package and pat dry.
Lightly sprinkle with salt and pepper.
Using a high pinching method, lightly coat the chicken with baking powder. This will give you an extra crispy skin. Rest in the refrigerator for an hour.After resting in the refrigerator, lightly coat the thighs with olive oil.
When close to the end of resting time, preheat oven to 325 degrees.
