Banana Pancakes with Cinnamon Strawberry Sauce

 


My wife was looking for something to take to her flower club meeting. A trip to the store where I work revealed strawberries on sale for 99 cents. After purchasing 5 lbs, t sliced them for her to put on angel food cake. In my haste, I didn't waste time coring them, just cutting off the top and slicing them.

After I finished I looked at the pile of tops and decided to dice up as much as possible from around the core. This was the birth of a new recipe.

Ingredients:

1 1/2 cups of finely diced strawberries   

1 cinnamon stick 

1/2 teaspoon molasses 

1 cup all purpose flour 

1 1/4 cup buttermilk

1 egg

2 tablespoons melted butter

1 tablespoon sugar

2 teaspoons baking powder

1/2 teaspoon baking soda 

1/2 to 1 teaspoon banana extract 

1 banana sliced thin

Begin by adding the strawberries to a small sauce pan. Simmer over medium low heat until the berries start to break down. Add the cinnamn stick and molasses. Allow to simmer until ready to serve.

Now start on the pancakes.mix the dey ingredients in a medium mixing bowl. Mix the wet ingredients until well combined. Add wet ingredients and dry until just combined. Don't over mix the batter, a few lumps are fine.

Heat a cast iron griddle over medium heat until a drop of water sizzles and disappears quickly.

Spray the griddle lightly with cooking spray. Spoon batter on to the griddle and wait about 10 seconds, then add the sliced bananas lightly pushing them into the bater. When bubbles on edges pop but don't close flip. Place on a cookie sheet in a 200 degree oven until all the pancakes are done. Serve with strawberry saice and whipped cream.
